Made from pasteurized Grade A part skim milk and other natural ingredients, this dry, crumbly Mexican cheese is coated with a mild red chile paste or powder, creating the illusion of high spiciness. However, it is actually a very well balanced cheese that is strong in flavor but not as robust as cotija.
