Inspired by the Wisconsin community from which it gets its name, Mike Brennenstuhl created Valmy, a gouda-style cheese washed in a Trappist-style chocolate stout and aged in the caves of Wisconsin’s newest culinary destination, the Door Artisan Cheese Company™.

Valmy is one of a handful of Wisconsin cheeses handcrafted by a team of cheesemakers at Door Artisan Cheese Company. With over 100 years of collective cheesemaking experience, the Door Artisan team produces a variety of original recipes, as well as traditional Wisconsin cheeses using fresh local milk from Red Barn Family Farms in Appleton, Wisconsin.
